Label Anglais chicken is a special chicken, developed from two old amd almost forgotten English breeds, the Cornish Red and the White Rock.
Unlike the intensively reared supermarket chicken, which is typically slaughtered within 40 days of hatching, Label Anglais are slow growing, taking at least twice as long to reach maturity.
The birds scratch around the fields and hedgerows on the farm, totally content in their environment, eventually maturing with a taste and texture to thier meat that is impossible to achieve otherwise.
Label Anglais are featured in Rick Stein's Food Heroes of Britain, and are used bymany top chefs, including Gordon Ramsey, Heston Blumenthal, Giorgio Locatelli and Luke Mattews.. |
